Using Kali in a VM is useful because it boots quicker than a live USB, it's seperate so if you make a mistake it won't affect your main computer, you can roll back to previous versions if needed, easy to upgrade, you can have multiple VMs on one machine which means no need for several USBs that you have to plug in and eject.
